So I have the iPhone 16 pro and recently updated it to the latest version however when I looked to see if I can turn my apple intelligence off the option suddenly doesn’t exist any longer! Is this normal? Does anyone else face the same problem as I?

Reading that message closely tells me that you can't disable Apple Intelligence because it's not currently enabled or available. Per the message, your:
iPhone language is set to: "English (Switzerland)"
Siri is language is set to: "English (United States)"
Although both English, they are not the same setting. Change one or the other so they match and then the typical Apple Intelligence setting should be available to enable/disable.
