How do I accurately count knitting steps on Apple Watch?

Yes I've tried "recalibrating" the watch. No of course that doesn't work. So probably tens of thousands of people who knit are finding that their Apple watch will not count their steps accurately – ever. It appears the only way for the watch to count your steps is to REMOVE the watch while you're knitting.

This is insane! Is there really no fix? Does Apple not care? Would they do this if it was basketball players or drummers? I wish I'd bought a Fitbit.
