The apps reorder themselves making it hard to memorize where they should be. I would love a default alphabetical list instead of the odd preorganized/precatagorized view that is hard for me to navigate.

See here: Organize the Home Screen and App Library on your iPhone - Apple Support. Unfortunately, there is no way to perform this, as of this reply. So, recommend to Apple that they make this an option. Apple may not get back to you directly, but the more feedback they receive on something, the more they will know what their customers prefer, and what to include in updates to come.
