at any given time I look at iStatistica and more cpu cores are all 107 or so degrees, but core 5 is always 160 degrees. Had the Mac for 3 days and no issues other than this, which concerns me. This screenshot is on an idle Mac only running a web browser in a 70 degree room.

Have you got the latest version of iStatistica as its website says you should update to avoid compatibility issues with Silicon Macs?
Before buying any app it is always worth doing a web search for free alternatives. You can save a small fortune that way eg. GIMP for Photoshop and DaVinci Resolve for Final Cut Pro etc. etc. Those 2 would save at least £500!

Before I got really worried, I would get a second opinion from a different utility like MacFanControl or TGPro.
As den.thed suggested it could be a fault with the app you are using so get at least one other to test the temperatures. Macs Fan Control is good and is free.

Macs Fan Control (the free version) has always served me well and works flawlessly on my M4 mini to both read temperatures and control the fan. If you're doing video editing or running AI models, you might want to manually crank up the fan speed once the temperature exceeds 60-70 degrees to prevent overheating.
IF you bought the device directly from Apple. you have 14 days to return it, I'd exercise that and get another to test. If the problem persists I would bet you under purchased for your needs.
At idle my Mini M4 pro runs 104-106°f on all cores. As suggested I would have Apple take a look.
now that I look at it, the reading for core 5 never changes regardless of system load. I almost feel safe chalking that up to a sensor. I'll run apple diagnostics just in case.
