With the increase in scams these days is there a way or will there ever be away for us to completely block emails being sent to our numbers and also silence unknowns texts like the same way we can silence unknown callers?

Blocking Out Spammers:
Use Malwarebytes Mobile Security. The free version blocks popups. The paid version blocks out known spam numbers. So, consider using it. Read the following post to see how to use this software: Blocked numbers - Apple Community

In iOS 15. Go to Settings>Notifications>Messages>Customize Notifications>Turn OFF Unknown Senders. This worked for me.

No prob. Glad I can help. In Messages settings, you must have Filter Unknown Senders for this to work.
In iOS 15. Go to Settings>Notifications>Messages>Customize Notifications>Turn OFF Unknown Senders. You MUST have Filter Unknown Senders in Messages Setting. This worked for me.
