Who is "they"? Please explain more about the issues you are experiencing with Apple Music.
There is absolutely NO remote access to the volume control on Apple Music. Not sure what you are referring to with other unauthorized access. They would need your Passcode to have access to your physical device or your Apple Account Password to access data stored in iCloud. That information can only come from you and it simply is not possible for someone to guess your passcode before your device locks due to failed guesses, unless yours is 1111 or 1234.

You still don't explain what you are experiencing. Please explain exactly what happened, and what you have done.

Unless you have them access to your device, they could not have controlled your device.
