There is no way for you to remotely erase an iPhone, if all that you know is its phone number.

If you could remotely erase a phone by just entering a phone number, any vandal could do that to anyone's phone.

If your girlfriend's phone was locked with a passcode that the thieves did not know and could not easily guess, and she likewise had an Apple ID password that the thieves did not know and could not easily guess, the passcode lock would have a very high probability of keeping the thieves out of her data. If the thieves stole the phone while it was unlocked (or worse yet, knew or learned her credentials), then it would be a different story.

You have of course reported the phone as stolen to the carrier, with a request to blacklist the phone, right? If no, do so.
