iPhone stolen unlocked :(

Tonight someone snatched my phone out of my hand while it was unlocked and first thing they did was remove it from FindMy iPhone. They changed all my passwords to EVERYTHING. Apple ID, email, instagram, facebook, my crypto account, WhatsApp, everything… They also managed to get into my email again after resetting the password.

I was able to remove the sim. The phone is not showing up on the devices list when logging into my Apple ID.

Is there any way to wipe the phone without access to it? Are my iCloud notes, photos etc still being shared with that phone? What steps do I take to make sure they can’t access my accounts ever again with the information they do have? I don’t know what to do because I feel like they still have a way of accessing my information. Even though I changed my passwords and the sim on the phone is no longer active. I feel like my identity was stolen.
