How to manage App & Website Activity in Family Sharing?

Enabling App & Website Activity forcefully allows the family manager to view my Screen Time. There is no option to use App & Website Acitivity while keeping it private as an adult in an iCloud Family.

Family sharing restrictions keeps resetting itself. In the last month I’m having to reset the screen time and safety restrictions for my children on the family sharing. it’s always been fine prior to this but it now resetting itself sometimes multiple times a day. It’s frustrating, time consuming and worrying to find that all the safety restrictions I’ve added to keep my children safe have been removed. How can this be rectified please?
