In this guide for iOS 18 (which my phone is on 18.3.1), there is this info:
Tap Sounds, select a sound, then tap < at the top of the screen.
But on my phone, the Sounds option is a Toggle, and I can only toggle it on/off. How do I select notification sound for a specific app? There are some apps with bizarre default sounds but it's important so I don't want to just turn it off.

Hearing Notifications:
Make it a quick ding sound, rather than a few seconds. If it was sent at the exact same time, expect the notifications to overlap. Sometimes, it just doest make a ding, and there's nothing to do about it.
Troubleshooting Notifications:
If Text Notifications are not occurring (as expected), then refer to the following...
“Well that's the thing, I want to do that, but it's not possible! There is no option for me to choose another sound.”
