Do Apple Stores accept cash payments for expensive things? not Apple Cash, like physical paper cash. Do they accept cash and is there a limit to how much cash they accept? Like can I spend $3000+ on a Mac?

In general yes, but you can never go wrong by visiting the specific store and asking in-advance from an individual with some authority. (i.e. the Store Manager)
Different stores may have different cash policies in effect.

I can easily see a store possibly not wanting to accept large amounts of cash at certain hours of the business day …
… or wanting to make special provisions for the actual cash transfer. (Nobody should want to be counting-out bills on the table in a busy Apple Store)
