Do you mean hard cash (bills and coins)? If so, I guess that depends on the seller. What are you looking to purchase, exactly? Who is the seller? Bring lots of hard cash to an Apple Store, and you might be able to buy it, as long as it is available.

The majority of stores that sell Apple products accept cash. I've paid cash at an Apple Store before, and the cash drawer slid out from one of the tables. It's not a given that every retailer will take cash though. I've seen Apple products sold through official outlets via airport vending machines, and those typically don't take cash.

That may vary with country and even by location within a country. You need to ask them. Apple will not see your question in this user-to-user setting.
