My AirPods updated to 7B19 last night, which is supposedly the update that contains the new hearing health options. My AirPods settings, however, are not showing any of the new features. I’m really looking forward to taking the hearing test.

There is not much to say. There are various conversation threads on the Internet where people discuss the same issues. Assumptions include region settings issues (which it is not), iOS version, roll-out lags, and other glitches. The solution is to just wait until next week when this feature is officially announced.
I managed to see the feature on my AirPods for a few seconds before it disappeared. I can reproduce this behaviour by restarting my phone, then opening the AirPods menu right after I open the case lid, and the AirPods appear in settings.
Hearing health has not gone live yet.
It requires a firmware update to the AirPods and an update to iOS.
Also should be noted, it is only going to be available in the US and Canada (from what I have heard).
