How to enable double tap function on apple watch ultra 2
I just purchase Apple Watch Ultra 2.
May I know how do I enable the double tap/double pinch function as similar to the advertised of Apple Watch 9/ Ultra 2 ?

Did you check Settings/Double Tap in the settings for the Apple Watch or in the Watch App on your iPhone?
You will need to update your Apple Watch Ultra 2 to WatchOS 10.1.1
