How do I update my iPhone 13 to iOS 16.7 from the Mac Finder?
Currently I only get the option to update to iOS 17.0.1

I can do that but I prefer to do my updates through my Mac instead of on the device. I'm concerned if an update fails, I will not be able to restore my backup to iOS 16.7 through my Mac and will be forced to update to 17.0.1.
Why would this be when iOS 16.7 was released today and Apple said it is compatible with iPhone 13?

Correct. You can no longer update an iPhone 13 to any version of iOS 16. You will need to update it to iOS 17.0.1.
Try doing the update through Settings on the phone. Perhaps it's available there. Generally, though, once a higher version of iOS is available, that's the only thing you can use.
Well, as it's obvious you can't update to iOS 16.7 through iTunes, you're only option would seem to be to do it directly on the phone. A .0.1 update is not likely to fail.
