There are no clear steps to do so via Apple Support. My first 21 days is about expire on the 11th of this month and my replacement phone may not arrive until after that. I can't do it from the original phone because it's already sold.

Well after being on the phone with Apple Support for over 35 mins, talking to at least 3 operators including a Senior/Supervisor. They're saying the only way to extend my temporary backup is on the device itself despite the Apple Support website sating this, "To request additional time to restore your temporary backup before it's deleted, contact Apple Support" as an option.

There's no blue "contact Apple Support". I have to chose from these two options seen in the photo below when I go to that page. I've tried going through all the options but nothing seems to lead to getting in contact with Apple Support about my issue
