About to give up...attempting to purchase just one song, or an album in the iTunes app and I am ALWAYS sent back to a subscription only option. Does that mean that the music is not available to purchase?

First, make sure you can enter the iTunes Store. Make sure you have enabled the Preference for "Show -- iTunes Store" as pictured below.
Once you are in the store, find what you want and click its price. For more details, see the buy section of this guide:

Thank you for your reply, what is frustrating is that I have no issues with iPhone / iPad, but my MAC (desktop) does not appear to recognize the iTunes store. When using the search option it always sends me back to the subscription option, however I am able to 'purchase' with my iPhone.

Look in Preferences, Restrictions, and make sure "Apple Music" is not disabled.
