When I start a new Pages document I can't write on it. Editing old documents works fine.
This occurs on my Mac Pro, which is fully updated. The issue started today.

If you selected the Blank Layout template instead of just the Blank template, then that would explain why you cannot enter text in a new document by just typing as you could with the Blank template.
The only means to enter text in a Blank Layout document is by inserting Text boxes.
