If I select 'hide extension' in numbers in Get Info, after a few uses of the file, the extension '.numbers' is mysteriously re-added... I select 'hide extension' again and it works for a while, but then the extension just randomly re-appears...
So the extension name doesnt permanently disappear... obviously a bug of some kind...

I've seen this problem reported by other users. You may have luck clearing up the problem by: 1) making sure you are running the latest version of macOS and Numbers, and 2) restarting your Mac.

Sorry, I have no details. (I like showing extensions on my machine.)
Because there have been multiple posts about this I am guessing it is a bug that will have to be addressed in a future release.
You can report the problem to Apple at Numbers > Provide Numbers Feedback in your menu.
