Can my FB Contacts read my Notes?

If you give Facebook access to your Contacts, then you have given Facebook permission to use your Contacts including the Notes field of that contact. You will need to contact Facebook to find out what they are doing with that information. For the contacts on your device, you can limit the access Facebook has:

If you are talking about one Facebook user viewing your contacts listed on that platform, then the Facebook UI does not show any other information to that user.
