Why is it we are up to 17.5.1 and yet can’t even copy and paste sections of text…

You mean that you can’t do this?
in text messages it copies the whole message. Read the question (sections of text) not notes.
That's right! you must copy the whole text and paste it in the notes or any application to select the wanted text. lol
As I just demonstrated, I only selected part of the text and was able to copy it.
