when marking a word or section in Pages I can't get a color over it so it stands out. Doesn’t matter what color I select in system preferences. This is on a MacBook Air 2018.

The selection color in Pages is governed by your choice of color in System Settings > Appearance > Highlight Color.
These are not vivid in Pages and that can be slightly improved by a change in the color profile used in System Settings > Displays > Color profile. I don't see much difference when switching from my default LG profile to Display P3 or sRGB IEC61966-2.1 profiles and how the selection appears in Pages may not be improved as you wish.
