image playground not letting me use a person as a subject

Not sure what you're seeing. If I click Person > Choose… it drops down a menu saying "Appearance". I click on that and it picks a face at random. I can choose to edit it as well. I have no "ANYONE".

I chose an image, one of a collection of images, of my Dad when he was about 18 year old

Typed in " Young image of my father "

Presto and viola

Except from making the new image a full frontal image.

Seems to look, sort of, like time

Im having the same issue... the demo I have watched when you go to select a person (if you choose to) has some of your contacts as options. Mine does not

I had the same issue. My partner fixed it by going and setting up CHATGBT … once you do that (takes 2sec) it will work . Good luck!

FWIW, you don't have to use an image of a person. You can have IP pick one at random.
