Photos app has become essentially unusable after an update

After the new update (which happened overnight since I generally think updates are good for security), the Photos app has become essentially unusable! What happened to all the folders I organized my pictures into. Is there any way I can undo the update so I can find photos I need to access?

I’d like to be able to look at pictures. I just took but now who knows where they are in my photo app. Thank you once again Apple for making things more difficult and wasting our time. What is the solution to this?

Over the years I've evolved in to someone who takes photos of people, events, projects, animals and nature. Very often adding a brief caption for posterity and sharing with those involved or associated with the particular context. Now a photo just taken may or may not be readily accessible, often menus away to find it, which I'm not finding it I'm stumbling upon it. This update has left me incredibly frustrated for hours on end. Nothing about this update makes any since to me. I've sought support and received none except for being told that there is no way of going back an update to when it was usable.

My one goal this week is to figure something out. Today I got nowhere, tomorrow I'm trying android.
