I have written 300 pages around my family history using Pages word processing. I pinned photos without knowing what I was doing. Do I delete the pinned images and use Media Placeholder instead to make my work flowable for publishing in Apple Books?

Why not perform a test export to EPUB using the Fixed layout on that export panel? Does the result suit you?
Alternatively, and particularly where you may have multiple images on a page, you might consider using the Media Image Gallery version of a media placeholder. It contains multiple images in one placeholder that you can switch between the captioned images. It exports nicely to EPUB as shown below where I used the Fixed layout EPUB style:
