No, of course it's not. Maybe Apple just doesn't want customers to look at iPhone screens which are too dim, while they are on display.

Not all features can be enabled at the same time. Some features are mutually exclusive, meaning if one setting is enabled, another must be disabled. This is just common sense, not customer manipulation.

I am clearly writing that I am checking the settings and behavior of the phone that I am holding in my hand, and you are suggesting that someone else is changing the settings - what sense does that make in the context of what I am describing? Unfortunately, store employees (in Poland) are very incompetent in terms of knowledge about devices and software. Some do not even know what Nit is. I have encountered this in an authorized service. So asking questions other than the price of the device is often a waste of time.

And what should I compare my phone to? To a cup of coffee in the store next door? With all due respect.

Of course I will compare it to exhibition phones of the same model. This is so obvious that I'm surprised I even have to explain it.

This was one of the main reasons I went with the Pro. I often use my phone in dark environments and for me this is very important. If I can't set this without lowering the white point, then that's a cause for dissatisfaction for me.

How do you know it’s not turned on? Where were viewing the devices on display, was it an Apple Store or third party retailer?

It could be customers playing with the settings. The only way to know is talk to the owner of the establishment. But that’s certainly not an Apple policy. I’d know. I’m a former Apple Store manager.
