Apple Mail .inetloc
I´m having trouble saving attachment onto my desktop by dragging it from Apple Mail to the Finder. It will be converted to a .inetloc file. I known I could you "save as …" but I like to drag & drop and it worked before.

almost any kind of attachment turns into a .inetloc. jpg, pdf, gif, png. its just quicker & easier to drag & drop.
There is no guarantee that drag and drop will work forever in Apple Mail as Apple does not guarantee that functionality. They do provide a right-click on the attachment menu item and your choice of saving the attachment.
What are you dragging and dropping that turns into a .inetloc file on your Desktop.
I could not reproduce any .inetloc file from Mail attached images, PDFs, links, etc by dragging and dropping them onto the Desktop.
Tested: macOS Sonoma 14.1.2.
