I would love to be able to change my stand goal ring to something else (preferably steps) because even though I stand a ton throughout the day my arms are up so the watch doesn’t count it as standing. So frustrating.

However for those of us without a sedentary lifestyle they are not irrelevant. Standing can also be faked by sitting with your arm straight down by your side. (Ask me how I know) So having goals that are relevant per person, in this case me, would be much more helpful. I’ll send the suggestion to Apple.
No, steps does not have a goal. There is only Stand (once per hour), Move calories and Exercise minutes.
Stand minutes is mainly for desk workers or couch potatoes to remind them to stand up and move at least once per hour.
Firstly steps are irrelevant in thr 21st century. They hark back to mechanical pedometers on your belt, and they can be faked by waving your arms around (ask my granddaughter) and stand-ups from a sedentary lifestyle are extremely important for good workplace health .
