Hello: Can someone give me explicit instruction how to back up my existing iPhone 12 onto my iMac (not in iCloud), to have in place just in case the migration from the 12 to the 15 doesn't go so well? Thanks so much.

Make sure you check the option to encrypt the backup, otherwise some data will not be backed up (health data, etc).
Do NOT forget the password you use to encrypt the backup. If you forget it, you will not be able to restore from the backup.

I agree with KiltedTim. Easiest password is your log in password. Since everything has to go through the computer there's minimal risk.
