When I go to my air pods, into accessibility there isn’t an option for Volume Swipe available. So I cannot turn the volume up or down on the air pods?

It sounds like you may not see an option to adjust your volume in the Control Center. You can use the steps below to add that item to your Control Center:
1. Go to Settings> Control Center.
2. To add or remove controls, tapor
next to a control.
3. To rearrange controls, touchnext to a control, then drag it to a new position.

in assessibility on the AirPods there IS NO OPTION FOR VOLUMN SWIPE. it is not there.
assessibilty is there but volumn swipe within it is not there as an option.
