If I remove my old iPad from my account so the new owner doesn't get my messages and email, will everything else stay on the old iPad? There are books on there I want to leave for the new owner.

That’s not possible. You will need to erase the device. Use the link that frazzm737 posted for you for the detailed instructions on how to prepare your iPad to sell or give away.
