Hello, when I go into my Apple Maps on my iPhone 12 to search something or get directions etc the app keeps crashing and closes itself down. I then go back into Apple Maps again and it does the same thing, I’ve even deleted the app and reinstalled it but it still keeps crashing now. So I have to keep using Google Maps instead.

Try resetting location and privacy settings. It's under "General->Transfer or Rest iPhone->Reset->Reset Location & Privacy".
It didn't solve my issue with Maps crashing but it has solved some prior issues with Maps behaving badly so might help your situation but no guarantee. Resetting this will force you to re-enable location privileges for all apps but it's not hard as each will prompt you to allow them to have access to location data as you open them. Of course, the first one you should re-enable is Maps to see if that fixes your issue. Best wishes.

Do your Part: Provide Apple with feedback on this, letting them know about this issue. Apple may not get back to you directly, but the more feedback they receive on this, the more they will know what is occurring, and what bug fixes to include in updates to come.
I’m having the exact same problem, I’ve tried every idea I can find online to no avail.
