In the App Store if you get a specific app like say Gardenscapes, it shows a random name in the first letter of that name as the profile picture. How would I go about changing this?

Hi! You can customise your Game Center profile by following these steps:
To change your nickname (which is the name of your Game Center profile), tap the field with your existing nickname. This is the one with the pre-selected name you described in your post. You can now change it.
To change the profile picture, tap ‘Edit Avatar’ beneath.
