I have an old Apple Watch - I haven’t used it in years!!!!

Now I’m trying to use it … of course I am 2 phones passed the one I had when I originally used this watch. I can pair it - it is possible it is paired with old phone I no longer have access to - how can I fix?

See this link and read the section on "If you don't have your old iPhone." --> How to pair your Apple Watch with a new iPhone - Apple Support

But honestly a watch which hasn't been used in years likely has a battery which will fail or has failed. Did you keep the watch on a charger all the time it wasn't used, or in a drawer? And depending on the model, it's WatchOS may not even be compatible with a newer iPhone.
