I'm running mac OS Catalina10.15.7 (19H2026) on a late 2013 model. How can I go back to an updatable OS? OSMonterey?

iMac 27″, macOS 10.15

It is not possible, see-> macOS Monterey is compatible with these computers

Just added 16 GB Ram and that has at least sped things up a bit.

Thanks. Not ready for a new computer and OSCatalina has reached its limit. Just added 16 GB Ram and that has at least sped things up a bit. Sad!
