Welcome to Apple Support Communities. We're happy to provide some guidance for this trouble you're having with Assistive Touch. Do you have an AssistiveTouch shortcut enabled? Go to Settings > Accessibility > Accessibility Shortcut. If AssistiveTouch is checked, uncheck it and test the issue. Also, have you recently paired the iPhone to a Bluetooth device? If so, connecting that device may be causing this. Go to Settings > Accessibility > Touch > AssistiveTouch > Devices, and ensure no devices show as paired there.
