How can I change the settings on my apple watch to open with a passcode instead of when unlocking the phone? The passcode settings are all grayed out on my phone. I had an alert when pairing the watch that I needed to set the apple watch this way because of my phone's security settings. What steps should I take to use a passcode to open my apple watch?

If they are greyed out on the phone and in the settings in the watch it sounds like your Watch is controlled by Screen Time. Turn it right off temporarily to see if it cures it.
