How to update my iPad without deleting any apps?
How do I update each time there is one if I don’t want to eliminate anything?

I don't think that is an option. Occasionally an iOS update will break an app that is no longer being supported by its developer. That is simply the way things are. Stay where you are, or move on and accept there may be some unwanted side effects.
