On the left end of the tab bar in Safari, is a little tab, which has nothing to do with anything I'm interested in, but doesn't have the x to close it. Is there a way to elliminate it? Or change it to something I might use?

In your Safari browser Safari>Help> Pinned ...for more info
if you remove all pinned sites you can reasonably expect the little tab to be gone.
