Can iOS photos and Microsoft Word and Excel files be stored simultaneously on this SSD? Or should I have two separate SSDs?

For at least some cases, yes, you can use external storage for a mix of files.

What are your plans and goals for this external storage? Portability of data to other platforms? Archival storage? Backups? Something else?

SSDs aren’t usually considered a very good for archiving data, for instance.
