Here's a page that may help from the larger Pages User Guide: Use a keyboard shortcut to apply a text style in Pages on Mac.
Follow these steps to remove the shortcut key. Then quit Pages, relaunch and try assigning the key again. This may trigger Pages to accept your shortcut again.
"Assign a shortcut to a style
If the text is in a text box, table, or shape, click the Text tab at the top of the sidebar to see text controls.
2.Choose Shortcut, then choose a key.
Now, the shortcut key appears next to the style name in the menu for easy reference."

Thanks for you answer. However, there is still a problem as you can only use shortcut after having select the text. I, and apparently several other user of Pages, use the shortcuts while we are writing (in the same way we use command+B).
Is it a bug and if yes, when will it be fixed? Tbh it has such a big influence on my way of working than I already turn to Word...

I want to join your query into the matter of MichaelB2019. Just as you did, I thought it was a bug when I could no longer start a bullet point list and then fill them in. It feels very counter-intuitive not being able to do so.
