eSIM compatibility in the UK & CA

Will an unlocked iPhone 14 Pro that uses eSims be able to use EE (carrier currently used in the UK & I don't wish to change the UK #) in the UK when returning from the US? The Apple sites “yes,” but EE reps. I spoke with today in the UK say it might not due to being purchased here in the U.S. Will it work? TIA for the 411.
