While "Preparing mac OS Monterey 12.5.1" it's been stuck on 15 minutes left for about 5 hours??
How much longer do I have to wait?

I would say 5 hrs is enough already.
When you are stuck—You can always force quit a shutdown by holding the power button/TouchID for ~6-10 sec.
Force Shut down your Mac.
Log out, sleep, wake, restart or shut down your Mac
Shut down or restart your Mac - Apple Support
Reboot as normal and see where this leaves you...most times you will find the install complete.
If not reboot into Safeboot mode and run the installer again.
