I decided to go back to my older version and got my mail back, I know it's not the latest IOS , however, I have a Desktop too and the apps that require a newer version work just fine on that. Mail, Finder and all the other ones that changed in Monterey are now working again like I had them set up and am happy with.

This all started because I wanted to use Pages and it would not open for me because I was just a few versions behind.

Ridiculous - this Mac is only 3.5 years old... should not have trouble running anything....

Thanks @leroydouglas. 'Use column layout' is what I was looking for to mimic 'classic layout' in prior versions.
