The look of MAIL in Monterey

I am trying to change the look of MAIL in Monterey to look more like older versions of OSX.

You used to be able to click on MAIL / Preferences / Viewing and it would give you the option to "Use Classic Layout". I would like the Classic Layout back.

In Monterey, Mail looks just like Safari. Very weak text very dim separation column lines I never can tell what I am reading from at a glance. It all looks the same.

Can someone please help me to find a workaround to change Monterey Mail to look more like the Classic Layout of previous OSX versions?

Thanks for the reply. I guess maybe Classic View was not a complete description of what I am looking for. I was assuming that the fonts would change with that selection. I have had column view selected and the show bottom selected and that does help however here is what I am having an issue with.

In MAIL (and actually noticing in Safari as well) the header to the page is white. The background is white. The font is ugly as heck and it is way too small. The icons and text are too small and the side column is barley a shade of grey that really is almost white too.

Can I change the size of the icons and text and change the side column and top header or even the main page color without using Dark Mode?

I have System Preferences/General Accent Color enabled yet everything stays white and light grey. I was able to change the font size in the Sidebar of Mail but not the Icons and Text at the top.

I would like to change the font size for the top of Safari as well.
