Can I just send one piece of iTunes music , not a whole album as a gift?

Yes. If you try to do it from an iPad or iPhone you can only do the full album, but if you are using iTunes/Music on a computer you can gift individual tracks. Click the pull down menu to the right of the price, and you will see "Gift This Song," as in the picture below.
