System Preferences updating is stuck on "checking for updates"
My M1 MacBook Air 2020 is stuck when updating to macOS Big Sur 11.6
It is always stuck on checking for updates.
My current version is 11.5.1

This annoying problem has persisted for months. Although "Safe Mode" has been an acceptable workaround for me, it shouldn't be required to begin with.
Although I am nearly certain they will suggest the same thing, I encourage you to contact Apple and at least tell them about it: Get Support.
Perhaps they will suggest upgrading via Recovery mode, which is another workaround we should not have to do: How to reinstall macOS - Apple Support. Scroll down to Other macOS installation options where it states:
"Or you can use Option-Command-R during startup to be offered either the latest macOS that is compatible with your Mac, ..."

Install EtreCheck and post the report. Allow Full Disk Access.
Use the Additional Text icon to paste in the report.
Restart your Mac in "Safe Mode" and try updating macOS while in that mode.

That didn't work..
Try running this command in the Terminal. Hopefully it will download the full installer to the Applications folder.
softwareupdate --fetch-full-installer --full-installer-version 11.6.7
