Question about an Apple Watch. I want the one with cellular and gps but i don’t know if I could get that watch and add cellular later?

You cannot add cellular to a GPS only watch,you have to buy the GPS+Cellular watch if you want the cellular capability.

Yes so I want to get the cellular capability but not sure I want to add the cellular plan right away to the watch. Can I add it at a later point

Yes you can.Until you add the cellular plan the watch will function as if it was a GPS only model.
