New Apple Watch 7

I have just purchased a new Apple Watch 7. When I try to pair it to my iPhone 7 Plus with iOS 14.8.1, it will not pair and I get a message that says “iPhone Out of Date”. What am I doing wrong as the iPhone says that iPhone software is up to date?
