My new Apple watch cannot pair with my iPhone 6s (iOS 14.4.4), and gives me this message... "iPhone out of date. Your iPhone is out of date. Before you can pair it with your Apple watch, you'll have to update it to the latest version of iOS." When I try to update the iPhone it tells me... "iOS14.4.4 Your Software is up to date". My watch is a dud for now.

There isn't an iOS 14.4.4. If you mean 12.4.4, you're using an iPhone 6, not an iPhone 6s, and can't pair a watch running 6.0 or newer with it; if needed, check the store's refund policy.
